Nothing, there’s nothing, that better identifies with an American summer like Strawberry Shortcake. As I sit here eating it for breakfast – yes - Breakfast! I think about all the happy memories it stirs up from the days on Diamond Lake. Mom used to make the shortcake with Bisquick. And we had one of those old, roundy type fridges with the freezer door on the inside. The door handle on the fridge was the flip kind and the memory of the sound of it today yanks me back to that kitchen in the cottage. Even the odd smell of the freezer with giant chunks of ice surrounding the half gallon of ever-present ice cream creates a warm fuzzy. And we always had Cool Whip, or at least the 60’s version of that, handy.
I’ve since learned to make my own whipped cream. It isn’t all that hard… you just, um, whip the cream. Add a little vanilla and some honey - bliss. The other night, though, I must add caution, I whipped a bit too long and now I have sweet creamery butter. Good thing Spouse-man is into bread…and speaking of bread, my shortcake is from scratch. Oh stop it, you know I ground the flour and made the little biscuits out of whole wheat.
Now that I am all grown up, I have the Donna version of the whole shortcake extravaganza. Strawberries mashed, homemade shortbread biscuits and lowfat vanilla yogurt.
So, I sit here, eating my summer strawberry shortcake dessert breakfast. Sue me. Or come on over and I’ll share. Maybe. Oops, sorry, it’s gone.
